Baked Chocolate Doughnuts

When doughnuts comes to mind, you may probably think of soft deep-fried doughnuts that you are likely to purchase from your local dunkin' donuts store. If you are concerned about calories though, you should consider this baked chocolate covered doughnuts. These scrumptious baked doughnuts are as much soft and fluffy as the typical fried ones, yet a lot healthier. The recipe is so simple with few pantry available ingredients. What you need is:

Ingredients:
 Pastry Dough:

Chocolate Glaze:
  • 100 grams of chocolate bar (chopped).
  • 2 tbsp of unsalted butter.
  • 1 tsp of honey.
 
Baking and Pastry Equipments:
  • Rolling pin.
  • Wire whisk.
  • Doughnuts Cutter.
  • Baking sheet.
  • Baking paper.
  • Wooden spoon.
Directions:
  1. In a large bowl, pour 1/4 cup of warm water. Sprinkle 1 package of instant dry yeast on top and mix well with a wire whisk.
  2. Add 3/4 cup of warm milk, 2 tbsp of sugar and 30 grams of softened unsalted butter and mix well.
  3. Add 1 large egg and beat well till all incorporated.
  4. Gradually add 2 cups of flour and mix well with a wooden spoon till well combined. Cover pastry dough with a plastic wrap and let rise in a warm place for 1 hour till doubled in size.
  5. When well risen, knead pastry dough on a floured surface till flour is well incorporated. At first the dough will be sticky, then it will get a bit firm and workable.
  6. Roll dough out to a preferred thickness and cut into doughnuts shape like using doughnuts cutter.
  7. Gently transfer doughnuts to baking sheets lined with baking paper. Let dough rest for 1/2 -1 hour hour.
  8. Heat oven to 350 F. Meanwhile, prepare chocolate glaze. On a double boiler, melt 100 grams of chopped chocolate bar over medium heat. Add 2 tbsp of unsalted butter and 1-2 tsp of honey.
  9. Bake cut doughnuts for 10-15 minutes. Dip in chocolate glaze and let cool on a wire rack, then serve. 
Baker Note:
  •  Make sure your instant dry yeast is not expired so as to end up with satisfying results.
  • Hot water or liquid tends to kill yeast whereas too cold water tends to prevent yeast from working quickly. Therefore, make sure your liquid is warm to end up with successful results.
  • If you don't have a doughnut cutter, you may use a normal cup to create the outer round part of the doughnut. As for the inner part, cut using a plastic bottle cap of Pepsi or mineral water. 
  • If you want your doughnuts to be neatly shaped, you may use doughnuts non stick pan. Make sure to grease it prior baking though. In such a case, fill a pastry bag with doughnuts dough then pipe into pan and let rest for 30 min prior baking.
